Simple Saturday Meals are the best. This one cooks in just one skillet and takes about 15 minutes, yet it is delicious and makes enough to serve the whole family. I used catfish, but you can use your favorite white fish or even chicken. Try this recipe for One-Skillet Fish and Rice, you’ll be glad you did!

Fish does not take long to cook, so this recipe came together in a snap. And since I cooked everything in my non-stick electric skillet, clean up was quick and easy, too. Make sure to have all of your ingredients needed for this recipe ready to go, as it moves quickly once you get started.
One-Skillet Fish and Rice
Ingredients:
- 15-ounce can chicken broth (I prefer low-sodium chicken broth)
- 1 cup uncooked 10-Minute Rice
- 1 cup frozen sweet corn
- 1 cup fresh (or frozen) green beans
- 2 pounds catfish fillets (tilapia or shrimp is also good)
- 1 teaspoon Italian Seasoning
- 1 teaspoon garlic salt
- 1 teaspoon smoked paprika
- 1/2 teaspoon pepper
- 1 teaspoon dried parsley
- lemon slices
How to make One-Skillet Fish and Rice?
Note: I used my Nuwave Electric Skillet for this recipe. This skillet is portable and so easy to clean. This recipe could easily be cooked on the stove-top in a non-stick skillet. But, the more I use my electric skillet, the more I love it.
Step-by-Step Instructions:
- Set the electric skillet to 225 degrees Fahrenheit (or medium low on the stove-top).
- The ingredients now get layered into the skillet. Add the chicken stock, uncooked rice, frozen corn, fresh green beans, and then the fish on top. Season with the herbs and spices and then lay the lemon slices on top of the fish.

- Cover the skillet and simmer for 10-12 minutes. All of the liquid will be absorbed by the rice and the fish and vegetables will be tender. It’s just that easy!

Serve One-Skillet Fish and Rice immediately while it is hot. This recipe makes 4 servings.
I served it with a tossed salad and rolls. So easy and super speedy, so you can get out of the kitchen and spend more of your Saturday with your family.
