Peanut Butter Granola

Old fashioned oats, maple syrup, honey and peanut butter come together to make this healthy granola.

Ingredients

  • 2/3 cup creamy peanut butter
  • 1/3 cup pure maple syrup
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 3 cups old fashioned oats
  • 1 cup salted peanuts
  • 1/2 chopped pecans
  • 1 cup dried banana chips optional

Instructions

  • Preheat oven to 325 degrees.
  • Add peanut butter, maple syrup, honey, vanilla and cinnamon to a large bowl. Whisk to combine.
  • Add dry oats, peanuts and chopped pecans to the bowl. Stir all together to coat oats thoroughly with the peanut butter mixture.
  • Spread the granola in a single layer on a large baking sheet lined with parchment paper or two smaller baking sheets.
  • Bake in a 325 degree oven for 10 minutes. Remove from the oven and stir.
  • Bake for an additional 10 minutes, until crisp and slightly golden. Remove granola from the oven and allow it to cool completely.
  • Stir in dried banana chips, if desired. Store in airtight containers. This recipe makes 8 cups of granola.

Notes

What can I add to granola?
There are so many great add-ins for granola! One of our favorite combinations is made by adding dried banana chips, as peanut butter and banana are just made for each other. You could also add in some dried cherries, dried cranberries or dehydrated strawberries, giving you a sweet, fruity flavor with the peanut butter. Another add-in we do often is dark chocolate chunks. Who can resist peanut butter and dark chocolate?
