Pepperoni Pizza Muffins, a kid-friendly recipe, can be made in less than 30 minutes. Serve them with extra pizza sauce for dipping.

Ingredients
16ouncesrefrigerated pizza dough, two 8-ounce tubes
15ouncespizza sauce
1teaspoonItalian seasoning
5 ouncespepperoni, mini
2cupsmozzarella cheese, shredded
grated Parmesan, garnish, if desired
Instructions
Heat the oven to 350 degrees Fahrenheit. Spray a 12-count muffin pan (or two 6-count muffin pans) with cooking spray and set aside.
Unroll the pizza dough and lay each sheet side by side to form a rectangle on a large sheet pan or piece of parchment paper. Add a layer of pizza sauce on top of the dough, spreading it to the edges. Sprinkle Italian seasoning over the sauce.
Add the mini pepperoni to cover the sauce. Sprinkle with the shredded mozzarella cheese.
Cut the pizza into two equal halves. Cut each half into 6 strips. Roll each strip into a pinwheel and place it into one hole of the muffin tin. Sprinkle each muffin with grated Parmesan cheese, if desired.
Bake in a 350 degree oven for 15-18 minutes, until golden brown. Remove from the oven and allow to cool for 5 minutes. Recipe makes 12 muffins.
