Bread:
1cuppure pumpkin
1cupgranulated sugar
1largeegg
1/3cupcanola oil
1/3cupmilk
1 1/2cupsall-purpose flour
1 1/2teaspoonspumpkin pie spice
1teaspoonbaking soda
1/2teaspoonground cinnamon
1/2teaspoonsalt
1/2teaspoonbaking powder
1/2teaspoonground nutmeg
1/3cupchopped pecans, optional
Filling:
8ouncescream cheese, softened
3tablespoonsgranulated sugar
1largeegg
1tablespoonmilk
Topping:
1cupconfectioners' sugar
3tablespoonsmilk
Instructions
Spray the bottom and sides of a 9x5-inch bread pan with cooking spray. Dust with flour, set aside. Heat your oven to 350 degrees Fahrenheit. In a large bowl or stand-mixer, combine the pumpkin, sugar, egg, oil, and milk. Mix until blended.
In a medium bowl, combine the dry ingredients for the bread, except for the nuts.
Slowly add the dry ingredients to the wet, mix until blended. Add the pecans and stir.
In a medium bowl, blend the cream cheese, sugar, egg and milk until creamy. Pour half of the bread batter into the prepared loaf pan, then top with the cream cheese filling, and finally top with the remaining batter.
Bake the bread in a 350 degree oven for about 55-58 minutes. It will be firm to the touch and golden brown. While the bread is baking, mix the topping ingredients in a small bowl until blended. When the bread has cooled, remove it from the loaf pan and drizzle the topping over it. Recipe makes 8 slices.
