Chocolate Scotcheroos
These crunchy, chocolatey treats are the perfect combination of butterscotch, chocolate and peanut butter. But best of all, Chocolate Scotcheroos require no baking, can be made ahead of time and travel well to any family gathering. Everyone will love these yummy bars! What’s not to love, right?

I truly love a dessert that is easy to make and requires no baking. These scotcheroos are made in less than 30 minutes and appeal to everyone. Simply slice them into bars and you’re good to go. They are perfect for a birthday party, baseball game or summer gathering. And they taste SO good!

Chocolate Scotcheroos Recipe
There are only 6 ingredients in these yummy treats. Originally a Kellogg’s recipe, these bars were created using Rice Krispies. Find the original recipe at kelloggs.com. I cut back on recipe amounts to make a smaller version of the recipe that fits nicely in an 8×8-inch baking pan.
What’s needed:
- light corn syrup
- granulated sugar
- peanut butter
- Kellogg’s Rice Krispies cereal
- semi-sweet chocolate chips
- butterscotch chips
How to make Chocolate Scotcheroos?
The process couldn’t be easier, let’s get started.
Step-by-Step Instructions:
- Spray an 8×8 baking dish with cooking spray.
- Combine corn syrup and sugar in a saucepan over medium heat. Stir until sugar dissolves and mixture begins to boil.
- Remove the saucepan from the heat and stir in peanut butter until melted and well combined. Add the rice cereal and stir until well coated. Press the mixture into the prepared baking dish.
- Melt chocolate and butterscotch chips in a double boiler over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm, about 20 minutes. Recipe makes 16 bars.

What is a double boiler?
Add two inches of water to a medium saucepan over low heat. Allow the water to simmer gently. Then, place your chocolate chips in a metal or glass bowl. Put the bowl on top of the saucepan to allow the steam to slowly heat the bowl and melt the chocolate. This is a fool-proof way to melt chocolate without burning it.
You can also use the microwave or melt chocolate directly in a saucepan, but it can burn easily and seize up if not watched and stirred carefully.
