Peanut Butter and Banana Muffins with Strawberry Jam
The flavors of peanut butter and banana are such a great combination. So naturally I created a recipe for Peanut Butter Banana Bread. Since the recipe makes enough batter for two loaves, I baked one loaf of bread and I also made some Peanut Butter and Banana Muffins with Strawberry Jam in the center. They are fantastic! They are moist and nutty with a POP of fruit flavor! PB&J people with love this one.

But I have to say, you’re missing out if you don’t make the muffins with jam in the middle. They are such a sweet treat!

You’ll need peanut butter and strawberry jam, of course, when gathering ingredients for making this recipe. Ripened bananas, large eggs, unsalted butter, brown sugar and your typical baking staples like all-purpose flour, baking soda and salt are also needed. Chopped peanuts or cashews are used to give the muffins a crunchy topping.

Peanut Butter and Banana Muffins with Strawberry Jam
Ingredients:
- BUTTER & PEANUT BUTTER– Use unsalted butter and cream peanut butter to make the bread and muffins.
- BROWN SUGAR & WHITE SUGAR– A combination of sugars are used to give the muffins their rich, sweet flavor.
- RIPE BANANA– Never throw away overripe bananas. They are loaded with sweet, banana flavor and can be mashed and put in plastic bags to go in the freezer or used in baking bread, muffins and cookies.
- EGGS– The eggs add body and thickness to the batter.
- VANILLA EXTRACT– Adding a touch of vanilla extract will enhance the banana flavor in the muffins.
- ALL-PURPOSE FLOUR– Self-rising or wheat flour can also be used in this recipe in place of the all-purpose flour.
- SALTED PEANUTS– Chop them and add to the top of each muffin before baking for a crunchy garnish.
- JAM– Strawberry jam is a classic pairing with peanut butter, but any flavor you like will work well.

How to make peanut butter banana bread?
Step-by-Step Instructions:
Recipe makes one loaf of bread and 12 muffins.
- Beat together the butter, peanut butter, and sugars until creamy. You want to use bananas that are overly ripe, the more brown spots the better. This means they will be super sweet and soft.
- Mash them well with a fork and add them to the mixing bowl, along with the eggs, milk and vanilla. Beat until combined.
- Mix the dry ingredients together in a medium bowl. Begin to add the flour mixture to the wet ingredients, one cup at a time, mixing well.
- Preheat the oven to 350 degrees Fahrenheit. Pour half of the batter into a loaf pan that has been greased with cooking spray. Add half of the chopped peanuts to the top of the loaf and bake for 50 minutes.
- Remove bread from the oven and cool slightly. Remove from the pan and cut into 1/2 inch slices. Recipe makes 8-10 slices.

How to make Muffins with Strawberry Jam?
Step-by-Step Instructions:
- Use an ice cream scoop to spoon the other half of the batter into a greased muffin pan, making 12 muffins with each cup about 2/3 full.
- Place a teaspoon of strawberry jam in the center of each muffin. Use a jam flavor that your family loves. Sprinkle the muffins with chopped peanuts.

- Bake at 350 degrees Fahrenheit for about 18 to 20 minutes. Remove muffins from the oven and cool slightly in the pan.
- Remove muffins from the pan and serve while the jam is warm and the muffins are soft and delicious. The recipe makes one loaf of bread and 12 large muffins OR 24 small muffins. The recipe can also be easily cut in half for smaller batches.
