Pumpkin Pie Pancakes
Some people call them gadgets, but many kitchen tools make cooking fun and easy, like this mini-waffle maker from DASH. It is small and easy to clean, so there is no problem finding a space in your cupboard to store it. This little gem is shaped like a pumpkin and makes a waffle/pancake in less than 2 minutes. I also have a Rival 20 inch griddle that I’ve had for more than 20 years and is great too for making small, perfect pancakes. I always set the heat dial to 325 degrees. Here’s the link for a similar griddle from Toastmaster.
Pumpkin Pie Pancakes Recipe
What’s needed:
- 1 1/2 cups milk
- 1 cup canned pumpkin
- 1 egg
- 2 tablespoons butter, melted
- 2 tablespoons white vinegar
- 2 cups all-purpose flour
- 3 tablespoons brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon allspice
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon salt

Note: I chose to omit the white vinegar and ground ginger, this was just a preference. The recipe yields 8 large or 16 small pancakes. They are delicious.
How to make Pumpkin Pie Pancakes?
- In a bowl, mix milk, pumpkin, egg, butter and vinegar. In a separate bowl, combine the remaining ingredients. Stir into the pumpkin mixture just enough to combine. Do not overmix.
- Heat a lightly oiled griddle or frying pan over medium heat. I used my new DASH mini-waffle maker and sprayed it with a bit of cooking spray.
- For the mini-waffle maker, I used 3 tablespoons of batter for each pancake. When using my Rival griddle, I use a 1/4 measuring cup to pour batter onto the griddle.
- Close the lid of the mini-waffle maker and wait about 2 minutes. The indicator light will turn green when the pancakes are ready. Remove the pancakes from the waffle maker and keep warm until ready to serve.
You can top these yummy pancakes with maple syrup and whipped cream, if desired. I served them with bacon and fresh red raspberries. Call it breakfast or dinner, pancakes or waffles…we call it YUMMY!
